 HOMEMADE TOMATO SAUCE

In this video, I will teach you two different methods to make tomato sauce from scratch using fresh tomatoes. It’s easier than you think. All the variety of tomatoes you find at the market are suitable for your homemade sauce.

HOMEMADE RISOTTO

 “Risotto” is an Italian first-course dish typical of Northern Italy.  In this video, I will teach you the basics of cooking a perfect risotto. Once you have learned the cooking technique,  you can cook any type of risotto you may like, even fish or meat risotto.

RAY WING IN BUTTER AND SAGE SAUCE
“Razza al burro”

This method is quick and easy way to pan-fry fish. The success of this dish depends on a butter sauce with sage which enhances the sweet flavor of the fish. In its simplicity, this recipe is extremely tasty. I prepare this recipe using skate wings, but it’s suitable for any kind of fish fillets or whole small fish.

SEA BREAM WITH WINE AND LEMON 
“Orata al vino bianco e limone”

This recipe is for those who love simplicity. The video describes a basic technique to cook fish fillets in a pan, a method typical of the Adriatic coast. I will cook sea bream fillets simply with olive oil, wine and lemon. You can use this technique for any kind of fish fillet. This simple cooking method enhances the natural sea flavor of the fish.

FISH IN TOMATO SAUCE 
“Pesce al sugo di pomodoro”

One of the most typical Mediterranean recipes is fish and tomato sauce. This can be your dreamiest recipe when you don’t have much time: easy, fast and very flavor balanced. Choose your favourite fish at the market and use the same technique.

FISH IN “CRAZY WATER” 
“Pesce all’acqua pazza”

Here you will learn how to cook fish in “crazy water”, a typical recipe from Southern Italy. According to this cooking method, the fish is cooked in a broth made with ripe tomatoes, fresh herbs, olive oil, white wine and onions. The fish is then served with bread which is soaked in the broth.

FISH IN SWEET AND SOUR SAUCE
“Pesce in agrodolce”

This video will teach you how to cook fish in sweet and sour sauce, a homemade sauce made of sweet oranges and limes. The result is a fish served in a very colourful sauce with fruity aromas. If you are in a mood for an unusual recipe, go for this one.

SALMON IN SWEET SAUCE
“Pesce glassato”

Cook the fish by enriching it with a sweet sauce made from fruits and honey. Easy recipe, few ingredients and a lot of flavour. The perfect recipe for summer and for those who are curious eaters and like new combinations of ingredients.

OCTOPUS SALAD 
“Polipo bollito con sedano e patate”

Boil fish and use it for a seafood salad, Italian style. I chose octopus which is the best choice for this cooking method. Fresh cod is another option. Best way to appreciate an octopus salad? Try it with potatoes and celery. This recipe is easy, fast and it’s the summertime dinner saver.

RED TUNA AND BELL PEPPERS STEW 
“Tonno stufato con peperoni”

“Stufato” is a very versatile Italian cooking method for fish. In this video lesson, we will cook “tonno stufato”, which means that we will cook the tuna in tomato sauce. I chose fresh red tuna and to make the dish even more delicious, I will add some bell peppers. This recipe is a fish lover’s dream.

BAKED SWORDFISH STEAK WITH POTATOES
“Pesce spada al forno con patate”

It’s time to learn how to bake fish. Starting with a swordfish steak, we will prepare a marinade and a breadcrumb coating. This easy method requires no special skill and can be used for almost any kind of fish. The swordfish steaks bake to perfection with potatoes. The perfect recipe for seafood lovers who don’t have much time to spend in the kitchen.

 ZUCCHINI AND SHRIMP CAKES 
“Frittelle con gamberetti e zucchine”

Coat fish in a batter done with eggs, flour and mixed with zucchini and fried until golden brown. The final result is a crispy fish cake Italian style which can be considered a yummy appetizer or a full-flavoured second fish course. This is a special treat but without all of the effort.

BAKED STUFFED SEA BREAM ROLLS WITH DEEP-FRIED EGGPLANT
“Involtini di melanzane e branzino al forno”  

This is a cooking method you will love. In this video, I will teach you how to stuff fish fillets. We will prepare baked sea bass fish rolls with eggplant. It requires a bit of time and planning, but it is worth every bit of effort.

“Pesce in crosta di sale” 

This old-school, easy and fast cooking method always guarantees a first-class result. It’s almost impossible to fail. You only need some salt and any kind of fresh or dry herbs. The result is an incredibly moist and well-seasoned fish with a gorgeous presentation.
